We know that our community cares about sustainability, and that making the right choices matter to us today. Sushi Tozai is working with our community to ensure that decisions are being made that reduce waste, ensure the highest quality, and promote a healthier future. We use local and organic ingredients when available.
In the years we have been open we have made many friends (the Tozai Family) won a few awards and enjoy continuing to serve our community. We have made many positive choices that directly affect the environment and our global footprint.
We have discontinued the use of disposable chopsticks, placemats, and one-time-use hand towels; we choose local produce (organic and seasonal when available), recycle all bottles and cans, corks, bottle caps, and have recently begun a very successful composting system with two local farmers. 100% of our fish and vegetable waste, table scraps and soft paper are now composted back to the earth instead of ending up in our local landfills.
We have cut our trash by nearly 1/3, and beyond that we look forward to buying local, organic produce from these farms in the spring. We are strong supporters in the community, school fundraisers, (Analy, Nonesuch, Summerfield) local political donations, and art and music programs such as the Bija Children’s Choir.
All of our vegetable oil becomes fuel for a local biodiesel school bus. We support iWalk Sebastopol, iGrow Sonoma County and seek to continue to offer sustainable choices in fish and local wines, beer and sake. We are aware of water issues and promote conservation methods. We also encourage our customers to walk or bike to Tozai when possible, and bring your own reusable containers when ordering take-out. We have switched from solely Styrofoam packaging and now more than half of our to-go containers are biodegradable.
